Karela chutney
If any one in your house has diabetes, try this chutney.Finely grind karela in a mixie add 2 tbsp salt and keep aside for 30 minutes or more.In a pan heat 2 tbsp. oil. Add 1/4 tsp. mustard seeds (rai) , 1/8 tsp. methi seeds (fenugreek), 2tbsp. til seeds (sesame), When they splutter add 1/2 cup coarsely ground groundnuts, 1/4 tsp. turmeric powder, red chilly powder (as per taste). Finally add 1 tsp coriander powder and 1/2 tsp. cummin powder. Mix well.Take karela mixture and remove excess (salty) water. Add to above mixture. Keep stirring. Cover and cook. Stir occasionally.Cook till karela is crispy. Add 2 tsp lemon juice and cook for 3 minutes.This chutney can be stored for 7/8 days in fridge.Use any time with any thing. It is good for DIABETES.
